Preparation Method

Making the puree: Blend the pumpkin pulp with a vertical blender (immersion blender) along with the Parmesan cheese until you obtain a smooth and homogeneous puree.

Seasoning: Add the melted butter, salt, nutmeg, and pepper to the puree. Taste the mixture and, depending on how sweet the pumpkin is, add a little more salt if necessary. Finally, incorporate the egg yolk.

Forming the duchesses: Transfer the mixture into a piping bag fitted with a wide star-shaped tip. Line a baking tray with parchment paper (you can secure it with a little butter or water underneath so it doesn't slip).

Baking: Form small rosettes about 5-6 cm in diameter, leaving a distance of 3 cm between them. Bake them in a preheated static oven at 180°C for about 15 minutes on the middle rack. Towards the end, activate the grill function for 3 minutes until the tips become golden and crispy.
