A good coffee vs. industrial coffee – coffee processed industrially. We can exemplify this with a very simple comparison: packaged bread bought from stores that don't restock daily (older than 3-4 days) and bread you buy directly from a bakery.

Another differentiating factor is the freshness of the coffee. Generally, very good coffee is within 3-14 days of its roast date. After this date, if it doesn't contain preservatives, a rapid process of aroma loss begins and after 2-3 months from the roast date there is nothing left to extract from these coffees.
