3 Vegan Pumpkin Recipes

Ingredients:

500 g pumpkin cubes

1 onion

1 carrot

600 ml vegetable broth

Juice from 3 oranges

1 tablespoon coconut oil or vegan margarine

1 tablespoon olive oil

1 tablespoon agave syrup or other vegan sweetener

1 pinch of nutmeg

Parsley for serving

Plant-based milk or vegan cream for serving (optional)

Instructions:

Heat the coconut oil in a pan and sauté the chopped onion and grated carrot until softened.

Add the olive oil and pumpkin and cook for 3 minutes, stirring constantly.

Pour in the vegetable broth and orange juice and simmer for about 30 minutes.

Blend everything with a blender, add the agave syrup and nutmeg.

Serve with vegan cream and fresh parsley.
