Let's see how to prepare delicious and filling baked stuffed potatoes, with a vegan option.
Ingredients (for 3-4 servings)
3 large baking potatoes
30 g butter (or vegetable margarine for the vegan option)
1 tablespoon of burduf cheese (or cream cheese type vegan cheese)
100 g grated cheese (or vegan cheese)
2 roasted peppers, chopped
Salt, pepper, fresh herbs (parsley, dill)
100 ml hot milk (or plant-based milk: oat, almond, soy)
Preparation method
Baking the potatoes Wash the potatoes, dry them and bake them in the oven at 200°C for 45–60 minutes, until tender.
Scooping and filling Cut the potatoes in half and carefully remove the flesh. Mash it and mix with butter (or vegetable margarine), milk (or plant-based milk), cheese (or vegan alternative), roasted peppers and seasonings.
Filling and gratinating Fill the skins with the prepared mixture, sprinkle with grated cheese (or vegan option) and bake for another 10–15 minutes. For a nice appearance, you can grill for 2-3 minutes at the end.
