Simbio Kitchen&Bar reinvents itself at the beginning of the year, at a new address, on Negustori Street 26, in a much more generous, urban and friendly space, in a house from the beginning of the 20th century.
GaleriaReabilitarea started in spring 2014 and was implemented by the SYAA architecture office, under the coordination of Eliza Yokina.
The space speaks about the ‘symbiosis’ between functional and aesthetic, between old design elements and modern, urban ones, between furniture designed and produced especially for Simbio and vintage elements recovered by the Simbio team itself.
“It was emotional the first contact with the house, quiet, beautiful, dark, with green light filtered from the abundant garden, smoky stoves, pale mirrors, heavy furniture. It was a moment I couldn't forget. The house already had its spaces well defined: the living room with skylight, the living room with the green stove, the small room, the large room, the stairs, the basement with brick vaults.
It was evident from the beginning that the bar would be in the basement, the restaurant with show-kitchen on the ground floor and the work area in the attic. We wanted from the beginning to keep and bring into the light the valuable things, and where it was necessary to come in complement with finishes as close as possible to the era in which the house was built" says Eliza Yokina, founder of SYAA.
“For us, Simbio means friends. You are surrounded by friendly people, in a relaxed atmosphere, which Eliza helped us recreate by highlighting the personality of each room. For example, in the living room with the skylight we placed a large communal table with a mirror, in which the painted glass from above is reflected.
In another room we have another communal table, around which strangers gather and can leave as friends. And downstairs, at the bar, we created an industrial atmosphere, mobilizing the old warehouse of the house with iron shelves and sheet metal. The bar is cast from concrete, and the chairs are replicas of the chairs used by mechanics.
In the summer, we will also have the attic arranged, an open space with a bright terrace, and in the courtyard behind the house we will cool off in the shade of the walnut tree. And everything happens in a house with a history of over a century, which we have furnished so that it encompasses the exact atmosphere we want at home at Simbio”, say Dana Nica & Iulia Younis, co-founders of Simbio.
With a capacity of 90 seats, distributed on two levels, Simbio Kitchen&Bar is open every day, from 10 am to 12 pm, and on Fridays and Saturdays until later.
The new Simbio menu is more extensive but retains the most popular dishes, such as asian beef salad, turkey ham sandwich or french toast with which it has accustomed its customers over time. In addition to the dinner menu, which varies depending on the seasonality of some ingredients or the inspiration of the chefs, the menu is specific to an urban gastro-bar with all-day breakfast and burgers.
